Ingredients
  

  • 1 can chickpeas 15 oz drained and rinsed
  • 1 cup diced cucumber
  • 1 cup cherry tomatoes halved
  • 0.25 cup red onion finely chopped
  • 0.25 cup chopped parsley fresh
  • 0.25 cup feta cheese optional
  • 0.25 cup kalamata olives optional halved
  • 1 whole lemon zest and juice
  • 2 tbsp extra virgin olive oil
  • 1 clove garlic minced

Method
