Ingredients
  

  • 2 cups cherry tomatoes halved
  • 1 large cucumber sliced
  • ½ red onion thinly sliced
  • ¾ cup Greek olives Kalamata, pitted
  • 1 cup feta cheese cubed or crumbled
  • 3 tbsp extra virgin olive oil
  • 1 tbsp red wine vinegar
  • 1 tbsp lemon juice
  • 1 garlic clove minced
  • 1 tsp dried oregano
  • Salt and black pepper to taste

Method
 

  1. Wash and chop the cherry tomatoes and cucumber. Thinly slice the red onion.
  2. In a large mixing bowl, combine tomatoes, cucumber, red onion, Greek olives, and feta cheese.
  3. In a small jar or bowl, whisk together olive oil, red wine vinegar, lemon juice, garlic, oregano, salt, and pepper.
  4. Pour the dressing over the salad and toss gently to coat all ingredients evenly.
  5. Let sit for 5 minutes to allow flavors to meld before serving.
