This overnight French toast casserole is the perfect make-ahead breakfast or brunch. Soft inside with crisp edges, it’s made with simple ingredients, warm spices, and can be customized with your favorite fruit or toppings.

Ingredients
  

  • 1 loaf brioche or challah cubed
  • 6 large eggs
  • 1 ½ cups milk
  • ½ cup heavy cream
  • ½ cup granulated sugar
  • 2 teaspoons ground cinnamon
  • 1 tablespoon vanilla extract
  • ¼ teaspoon salt
  • Optional: 1 cup blueberries or sliced fruit
  • Optional topping: ¼ cup brown sugar + 1 tablespoon melted butter

Method
 

  1. Grease a 9x13 baking dish and add cubed bread evenly across the bottom.
  2. In a large bowl, whisk eggs, milk, cream, sugar, cinnamon, vanilla, and salt.
  3. Pour mixture evenly over the bread. Gently press down to soak.
  4. Cover and refrigerate overnight (or at least 4 hours).
  5. When ready to bake, remove from fridge and let sit 15 minutes while oven preheats to 350°F.
  6. If using, top with fruit and sprinkle with brown sugar mixture.
  7. Bake uncovered for 45 minutes, until golden and cooked through.
  8. Cool 10–15 minutes before slicing. Serve with maple syrup or toppings of choice.
