- Pour ½ cup cold juice into a bowl and sprinkle 3 tbsp beef gelatin over it. Let bloom for 5 minutes.
- In a small saucepan, heat 1 cup juice over low heat until warm, not boiling.
- Slowly whisk the bloomed gelatin into the warm juice until fully dissolved.
- Stir in 1–2 tbsp honey and 1 tsp lemon juice until smooth.
- Pour the mixture into silicone molds.
- Refrigerate for 1–2 hours until fully set.
- Pop gummies out of molds and store in an airtight container in the fridge (up to 2 weeks) or freezer (up to 3 months).
