  • 2 tbsp Cold water For blooming gelatin

Equipment

Method
 

  1. In a small bowl, bloom the gelatin by mixing it with 2 tablespoons of cold water. Let sit for 5 minutes.
  2. In a saucepan, gently heat 1 cup of herbal tea (do not boil).
  3. Add the bloomed gelatin into the warm tea and stir until fully dissolved.
  4. Mix in stevia or monk fruit, lemon juice, and pink salt if using.
  5. Pour the mixture into silicone molds or a small glass dish.
  6. Refrigerate for at least 4 hours, or until fully set.
  7. Cut into cubes or serve directly once chilled.
